Recipe - Pesto Couscous
This recipe is so easy, I'm surprised I did not think of it sooner. I had never thought of it before, or even heard of it being done before, so I decided to post it in case it was of interest to others. Try it with my Basil & Garlic Scape Pesto here.
Makes 4 Servings
- 1 cup low sodium chicken broth
- 1 cup couscous, plain
- 2 tablespoons Basil & Garlic Scape Pesto
- 1 tablespoon freshly grated Parmesan cheese, garnish
Bring chicken broth to a boil. Remove from heat and add the pesto and couscous. Stir, cover, and let sit for 5 minutes. Garnish with Parmesan cheese and enjoy.
